Bakery (Night Shift)

About the role

Accor is hiring a full-time Bakery staff member for the night shift in Baku. The role covers preparing and baking a wide range of bakery products, keeping the night shift clean and safe, and coordinating with the Pastry/Bakery team.

Key responsibilities

• Prepare and bake breads, rolls, pastries, croissants, Danish pastries, cakes and other products according to recipes and standards.
• Prepare doughs, fillings, creams and other bakery components.
• Ensure products meet quality, quantity, consistency and presentation standards.
• Operate ovens, mixers, proofers, refrigerators and other equipment safely.
• Monitor baking times, temperatures, proofing and product quality.
• Label, store and handle products according to food safety requirements.
• Maintain a clean, organized and hygienic bakery area during the night shift.
• Follow HACCP, food safety, hygiene, health and safety standards.
• Check raw materials, report shortages or quality issues, minimize waste and rotate stock using FIFO.
• Coordinate with the Pastry/Bakery team and prepare items for breakfast, restaurants, room service, banquets and events.
• Complete production and handover reports and brief the morning shift.
• Assist with inventory control and clean up equipment and work areas after production.

Required profile

• Previous experience in a bakery, pastry kitchen, hotel or similar food production environment.
• Culinary or bakery/pastry education preferred.
• Ability to work independently during the night shift.
• Willingness to work night shifts, weekends and public holidays as required.

Required skills

• Good knowledge of bakery production methods and techniques.
• Knowledge of food safety and HACCP standards.
• Good organizational and time-management skills, attention to detail and quality awareness.
• Ability to work under pressure and meet production deadlines.
